Butter
200 ml Sugar
50 ml Brandy
50 ml Christmas fruit mince
1 large tin of peaches, drained. Keep 200 ml peach juice for recipe.
Divide and place a portion of Christmas fruit mince into the centre of each peach, and then place the peaches into a casserole dish, which has butter smeared around the inside surface.
Gently heat the 200 ml of fruit juice, add the 200 ml sugar and, once dissolved, pour over the peaches in the casserole dish.
Place the lid on the casserole dish, place in the oven, and heat for half an hour.
Remove the lid, pour the Brandy over the peaches and set alight to flambé, and transfer to the dining table to be served.
Serve with either ice cream or whipped cream, and, if desired, a sprinkling of chopped nuts for added texture.
